Ultimate hot chocolate

Nothing beats hot chocolate made with the real stuff. Add a splash of Amaretto or Marsala when whipping the cream to give this even more edge. For a less indulgent variation made with semi-skimmed milk click here to download the pdf.

  • 600ml whole milk
  • 250ml double cream
  • 250g dark chocolate
  • 1 tsp ground cinnamon
  • ½ tsp mixed spice
  • 2 tbsp golden caster sugar

To serve

  • 4 cinnamon sticks
  1. Place the milk, 150ml of the double cream, 200g of the chocolate, the ground cinnamon, mixed spice and sugar in a saucepan and bring to a gentle simmer. Stir gently until the sugar has dissolved and all the chocolate has melted.
  2. Whisk the remaining double cream to a soft peak and grate the remaining dark chocolate.
  3. When the hot chocolate is ready, ladle it into mugs. Add a cinnamon stick to each mug and dollop over the whipped cream. Sprinkle with grated chocolate.
