Mojito ice

Mint and lime make for a refreshing combination – with a bit of a kick! 52p per serving

  • 6 large limes, juice only
  • 100ml white rum
  • 100g caster sugar
  • 15g fresh mint
  1. Place the lime juice in a jug with the white rum and sugar, stir well until the sugar has dissolved, then make up to 800ml with cold water.
  2. Pop some mint leaves in each of the moulds then pour the lime mixture over. Add a lolly stick and freeze for 4 hours or overnight.
